Recipe: Grilled Pizza

i promised you last week that i would share the recipe for the grilled pizza i blogged about.  debating what to eat tonight?  i think i just decided for you.  


Step 1: pizza dough
adapted from this recipe


  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 2 cups whole wheat flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 teaspoons white sugar
  • fresh chopped rosemary
  • fresh chopped oregano

1.) Dissolve yeast in 1 cup warm water.  let stand for a few minutes
2.)  Oil a large bowl (this helps prevent the dough from sticking to the sides when rising)
3.) Mix your flour, salt, sugar, rosemary, oregano
4.)  Form a well in the center of your flower and add in the olive oil and yeast mixture
5.) Mix ingredients together, slightly kneading your dough.
6.) Cover dough with a towel (or plastic bag) and allow it to rise and double in volume (about 30 minutes)



Step 2: the sauce (make this while your dough is rising)

1-2 cloves garlic
olive oil
canned diced tomatoes
salt
chopped basil
fresh sprig of rosemary
fresh sprig of oregano

1.) Mince and sauté garlic with the olive oil
2.)Once the garlic has a nice aroma and starts to brown, add the diced tomatoes
3.)Add salt to taste, and toss in the basil, rosemary, and oregano
4.) Let simmer until sauce is the desired consistency

{you could always add chopped onions to this for extra bulk}
*tip: i go back and forth tasting the sauce until i think it tastes just right, add more garlic, salt, pepper, or even throw in balsamic vinegar for a nice touch


step 3: roll the dough

 1.) Lightly oil (or flour) your surface
2.) Roll dough out to your desired consistency.  Keep in mind that the dough will shrink once it heats up.
*tip: i usually roll my dough out the size of the platter it will be served on (cookie sheet, pizza pan, etc.)


step 4: grill time
1.)  Heat grill to around medium, medium-low
2.) Lay pizza dough directly onto grill
*tip:  make sure you stay outside while the dough is on the grill, it literally takes only 1-2 minutes to cook (..and then burn)
3.) Remove pizza crust from grill


step 5: assembly line

1.) Add your marinara sauce to the pizza crust (making sure to remove the sprigs of rosemary and oregano!)
2.) Top with desired ingredients...olives, chicken, onions, pesto, and of course, cheese (i used goat and mozzarella)

step 6: melt the cheese (optional)
1.) To melt the cheese, I simply place my pizza under the broiler for a few minutes


step 7:Bon appétit!
